Back-to-school season looks a little different for Jenna Layson and her family because she and her husband, Jarret, have chosen to homeschool their two daughters, Bailey (15) and Olivia (8).
“So, our back-to-school isn’t quite as abrupt. We do more of a slow start,” shared Jenna. “But I love getting back into a routine. The school year often feels more relaxing than summer.”
During the school year, their oldest daughter takes on the responsibility of making dinner one night each week. The family started this tradition when Bailey was 14, and it has been a huge help for Jenna while also providing a valuable learning experience for Bailey.
“My 15-year-old is a huge help and is always willing to pitch in,” Jenna said. “Olivia is always eager to help in the kitchen too, but her jobs typically just involve mixing.”
The family has a small homestead with goats, chickens, and honey bees. Whenever they can, they prioritize using natural and organic ingredients in their recipes. This helps ensure their meals are as wholesome as possible.
One of the family’s favorite dishes was recently added to their meal rotation—a delicious Tex-Mex Casserole. It’s easy, versatile, and quick to prepare. The recipe has already been shared among several moms, making it a true family favorite that’s kid-tested and approved.
“We are currently in a season of life where I need easy, healthy meals that my family loves,” said Jenna. “I love that I can freeze extra portions and have them on hand when I want to take a meal to a friend. It’s already gluten-free and is easy to make dairy-free, so it’s versatile for a variety of dietary needs.” The Layson family spends much of their time hosting friends and doing life with other families. They also enjoy playing pickleball, spending time outdoors, and serving at their church.
“Protect family dinner as much as you can. As my kids have gotten older, I’ve realized how easy it is for schedules to become so full that everyone is constantly rushing in different directions,” encouraged Jenna. “We’ve been intentional about leaving enough margin in our lives to gather around the table together. Sharing a meal and simply being together are usually my favorite moments of each day. I truly believe that years from now, we won’t wish we’d squeezed in one more activity. Instead, we’ll be grateful for the time we spent together as a family.”

Tex-Mex Casserole
Ingredients:
- 2 cups cooked, chopped chicken
- 1 (15-oz) can black beans, drained
- 1 (15-oz) can corn, drained
- 1 (14.5-oz) can diced tomatoes, drained
- 1 cup cooked rice
- 1 packet taco seasoning
- 2 cups shredded cheese
- Optional Toppings: Tortilla chips, Sour cream, Salsa, Cheese dip
Instructions:
- Preheat the oven to 350°F.
- Place the chicken, rice, corn, black beans, tomatoes, and taco seasoning in a 9×13-inch casserole dish.
- Mix well until all ingredients are evenly combined.
- Top with the shredded cheese.
- Bake for 15 minutes, or until the cheese is melted and bubbly.
- Serve with your favorite optional toppings.
